Hokkien noodles are round egg noodles that are usually of medium thickness. Bring a pot of water to a boil and cook the egg noodles according to the instructions. Once cooked, transfer to a colander and rinse with tap water to cool. Combine the marinade ingredients in a medium-size bowl.

The ingredients needed to make Hokkien Noodles:
  1. Make ready 1 packet thick Hokkien Noodles (440g)
  2. Prepare 1 tp corn starch + 1 - 2 tbsp water
  3. Take 1 C shrimp (or fishballs)
  4. Take 1 C meat slices
  5. Prepare 1 C cut green vegies
  6. Take 4 cloves garlic - finely chopped
  7. Make ready 3 tbsp lard/ cooking oil
  8. Take 4 tbsp or more caramel soy sauce/can use dark soy sauce
  9. Prepare 1 tbsp oyster sauce
  10. Take 1 tsp sesame oil
  11. Take 1 tsp chicken cube or chicken powder seasoning (to taste)
  12. Take 1/2 C water or chicken stock/pork stock
  13. Prepare 2 tsp sugar
  14. Prepare Note:
  15. Get 1 . Some people use animal fat like lard or beef dripping to cook this noodle
  16. Prepare 2 . Marinara mix can be used in placed of fish balls/fish cakes

Hokkien Mee is a stir-fried noodle dish popular throughout Southeast Asia. With origins in China's Fujian province, it may also be referred to as Hokkien Char Mee or Hokkien Fried Noodles. Submerge the hokkien noodles with boiling water in a large bowl. Loosen up the noodles with some tongs then drain.

Steps to make Hokkien Noodles:
  1. There are variations of hokkien noodle. Choose the thick one. Soak noodles in boiling water to soften. Drain and set aside. Since i don’t take pork or lard, i use other type of animal fat. Below is a picture of animal fat i use at home. Feel free to replace it to your preferred animal fat.
  2. Heat wok. Pour in oil (or lard if using). Add garlic then meat slices, cook for 2 to 3 mins.
  3. In separate bowl, mix all the sauces- cooking caramel (if using), dark soy sauce, sesame oil, ground pepper. Pour this mixture into the wok. Add water, sugar and chicken cube (if needed). Stir. Then add noodle and cut green vegies of your choice. Next Add corn starch mixture. Let it simmer again till gravy thickens. Adjust taste to your liking. If using lard, add another spoon of lard to the noodle at this stage. Stir and remove from the heat.
  4. Serve hot.

Submerge the hokkien noodles with boiling water in a large bowl. Loosen up the noodles with some tongs then drain. Place a large empty bowl next to your stove top and heat a non-stick wok / fry pan to high. I just got back from Australia and ate hokkien noodles a lot. I live in San Francisco and have seen them sometimes called that at the asian markets but my husband thinks they have a more common name here.
