  8. If the soup has too many veggies, no harm in adding more broth. If too much broth for your taste, try adding carrots or purple potatoes. I like to serve with a warm, seedy, crusty bread.

Pour in chicken stock and return sausage to the pot. Stir to mix and add bay leaves. In a large pot, heat the olive oil over medium-high heat. Add the onions, celery, carrots and garlic. In a large pot combine all ingredients bring to boil.
