- Melt butter / olive oil. Add chopped shallots and garlic and stir fry until shallots become translucent but not brown.
- Add water and any vegetables that are frozen or take a while to cook (eg ginger root, peas, leek, any frozen ones). Bring up a boil and immediately lower the heat to medium low so the soup just simmers.
- Add all the spices except fresh herbs.
