Cook the sliced sausages ver medium-high heat. Simply throw seitan and vegan sausage in a slow cooker with celery, onion, bell pepper, and Cajun seasoning to make this easy weeknight jambalaya.   7. Once rice is tender add salt, pepper and creole seasoning to taste. If you like iy a bit on the hotter side you can dice scotch bonnet peppers into the mixture or add a squirt of your favorite hot sauce.
  8. Garnish with parsley
