  8. Gather Step 7 into one clump and wrap with a plastic wrap. Let it sit in the refrigerator for more than 30 minutes.

  11. When cutting out the cookies….roll out the dough with a rolling pin, and cut out to shape.
  12. When cutting out the cookies in a hot weather, roll out the dough on a plastic wrap and let the dough sit in the refrigerator for a while before cutting for easier cutter and cleaner shapes. Put the dough in the refrigerator if the dough becomes too soft.

  14. This picture is for a dough chilled in the refrigerator with egg white brushed on and spread sugar crystals around.
  15. The sugar crystals are big, so to let them stick to the outside of the cookies, I wrapped the dough and let it sit in the refrigerator (for about 15 minutes) to let the sugar crystal stick to the dough well. Then, cut the dough into about less than 1 cm thickness.
  16. After shaping, bake in a 355F/180C preheated oven for 15-20 minutes, and then they are ready.
