Directions In a Dutch oven, cook sausage over medium heat until no longer pink. Drain fat and crumble sausage; return to Dutch oven along with remaining ingredients except mustard. In a Dutch oven or soup kettle, cook sausage over medium heat until no longer pink; drain. Pour in lentils and tomatoes and stir for a few times.

  2. Dice onions and celery. Mince garlic.

  8. If the soup has too many veggies, no harm in adding more broth. If too much broth for your taste, try adding carrots or purple potatoes. I like to serve with a warm, seedy, crusty bread.
