The ingredients needed to make SUMMER PRAWN SALAD:

  2. Get red onion
  3. Get tomato

  2. allow to marinade for 5 min
  3. fry prawns in a bit of garlic butter until cooked
  4. dice advocado pear
  5. add prawns to marinaded onions
  6. add the advocado pear
  7. serve…..with a glass of white wine

Put the last seven ingredients (the dressing) in a separate bowl and mix well. Combine both sets of ingredients and mix well. The pure white of the sauce sets of the pale pinkness of the prawns, the vivid red of the pepper and tomatoes and the green of the mint. Elegant cucumber ribbons, crisp lettuce and prawns are drizzled with a spicy sriracha mayo and served as a generous sharing platter. I love to make main-dish salads in the summertime and serve them with some crusty bread and a nice glass of wine!
