- Wash and soak pink masoor dal for 30 minutes - - Grind it into paste using minimal water

- Add chopped onion and fry till onion turn golden brown in color. - Add ginger garlic paste - Keep stirring
- Now add the masoor dal paste in the pan, roast over low heat stirring continuously till it turns light brown in colour.
- Add salt, red chili powder and amchoor powder and mix well - Add chopped Coriander leaves.
- Dal is ready when it leaves sides of the pan and all the moisture is evaporated. - Let the mixture cool down little bit.
- Grease a large plate with little oil - Evenly spread the dal mixture in the plate with 1/4 inch thickness. - Let the mixture set in the fridge for 1-2 hours.
- Once mixture is nicely set, cut into equal shape squares.
- Take oil for frying in a pan - - I have pan fried them one can shallow fry or deep fry too - Let the cutlets be crispy & brown from both the sides.
- Serve Masoor Dal Cutlet warm with green chutney.
- Note - - These cutlets can be made and stored in the fridge and fried at the time of serving
