- Cook on high pressure for 12 minutes and NR for 10. Release the rest of the pressure then shred chicken
- I like to add the shredded chicken back to the pot for a few min to soak up more flavor
Pour the beer around the chicken. (You may need to add a little chicken broth or water depending on the size of your crockpot.) Season the chicken and then sear on both sides in the Instant Pot, using the saute function. Remove to a plate and set aside. Next, sauté the onion and garlic and season with chili powder salt. Stir in the chipotle peppers, tomatoes, and reserved chicken in a single layer and pour the lime juice over the top. Once done, let the pressure release naturally.
