While sausage and veggies are cooking, cook rice per package instructions. Stir hot, prepared rice into sausage/veggie mixture when done. Season with salt and pepper, to taste. Immediately sprinkle with grated mozzarella cheese and serve while hot.

- Cut slightly frozen sausage into bite size pieces. Fully cook and brown sausage.
- Drain sausage and set aside
- Wipe out pan and prepare rice a roni according to package directions
- Add chopped peppers to rice when there is 5 min simmer time left according to package directions
- Add sausage, sautéed onions, chopped apples, spinach, butter, milk and maple syrup
- Simmer 4 min covered, and an additional 4 min uncovered
Season with salt and pepper, to taste. Immediately sprinkle with grated mozzarella cheese and serve while hot. In a medium-sized skillet over medium-high heat add the sausage and cook halfway. Add the onion, celery, and garlic and continue to cook until the vegetables are tender and the sausage is no longer pink. In a small bowl, whisk together the chicken broth and cream of celery.
