- After it boils bring heat down to med low. and let simmer until it reduces to consistency of your liking. the longer you cook it out the less acidity you will taste from sauce.
Add whole chile or red pepper flakes, oregano (if using) and salt. Place basil sprig, including stem, on the surface (like a flower). Let it wilt, then submerge in sauce. Basil is a fragrant herb that is made for marinara. Instead of waiting to garnish your pasta with it, use it while the sauce is simmering.
