Turning Eggnog Into Ice Cream This recipe is similar to the eggnog recipe, but with a couple more egg yolks, and a slightly different milk to cream ratio. And then, of course, churned into ice cream. You could probably easily use already prepared eggnog, even the store-bought stuff. The richer the eggnog you begin with, the richer your final ice cream will be.
Instructions to make Eggnog Ice-Cream:
- If the eggnog is not so sweet, you may wish to add 1-2 tablespoons Caster Sugar. Mix well until sugar dissolves well. Freeze the eggnog in ice trays.
- Place frozen eggnog cubes in the food processor. It might be difficult to take the cubes out because frozen eggnog is soft and sticky.
- Pulse until coarsely chopped. Then start processing, gradually pour 1-2 tablespoons Cream (*optional) through the feed tube, and process until smooth.
- Place in the freezer to firm up before serve.
You could probably easily use already prepared eggnog, even the store-bought stuff. The richer the eggnog you begin with, the richer your final ice cream will be. If you use a fat-free one, the final product will be a little more like ice milk than ice cream, but that's nice in its own way. I, however, prefer the full-fat commercial or Homemade Eggnog. Those will yield a far silkier, creamier end product.
