I use turkey kielbasa to cut down on the fat, but not the flavor. I love this I skipped the sausage so I sauted the onion & garlic (two cloves) in a tsp. of olive oil. When it comes to meal-in-a-bowl soups, this is one of the best. Collard greens or chopped kale can be used instead of spinach.

- In a cast iron skillet, heat heat butter, oil, and all spices together then add kielbasa and brown.
