Instructions to make Lettuce Salad:
  1. Bring the water and salt to a boil. Put 2 kinds of lettuce and tomyo and cook for 10~20 seconds, immediately soak in cold water and let them cool, then drain very well.
  2. Just before eating, combine the drained vegetables and mayonaise and chopped ume(optional). Season with salt and pepper.

Use any extra as a dip. Add the chopped lettuce, tomato and onion (if using) to a large mixing bowl. Next add the mayonnaise, beginning with a quarter cup, and lightly toss then add another quarter cup if needed so that the salad is lightly coated. Season with salt and black pepper. Cover and chill in the refrigerator for half an hour before serving.
