  2. Peelthe skin off and dice the vegetables.
  3. Dice pickles and red onion.
  4. Cut pickled cabbage or if using sauerkraut (more acidic) rinse it and squeeze out water until it’s pretty dry.
  5. Rinse the beans and cut herbs if using.
  6. Mix all ingredients together. Add salt and oil.
  7. Enjoy!

Drain vegetables, cool, and remove skins. Dice and place in a large bowl. Make the salad: To the beets, add the rest of the ingredients like mayo or sour cream or greek yogurt, (I used greek yogurt, so used vinegar also), garlic, dates, walnuts, salt and pepper. Mix well to combine and refrigerate till its time to serve. Add dressing to potatoes and carrots and mix gently with a rubber spatula.
